Sausage Binder - Fat Substitute



A must have for the home meat processor if you want to have flavorful juicy sausage. Sausage binder is a soy protein product that is used to retain moisture and flavor in smoked or fresh sausage. The meat juices will be retained to add to the flavor of the sausage. Used as a fat substitute when making sausage as it binds the fat to the meat so it's not lost in processing or heating. 2 lbs bag.

Recommended usage is 3 lbs for 100 lbs of sausage. Mix binder with twice its weight in water to the consistency of oatmeal. Mix throughout the meat evenly.
