The stuffing plate or Bean plate as it is sometimes called is designed to keep the worm gear centered in the head, allowing the meat to flow more easily into the sausage casing. Simply remove the plate and knife from the worm gear and replace it with this stuffing plate, install a stuffing tube and you're now ready to stuff your sausage casing without grinding the meat again.
